Sometimes you want all the comfort and rustic homeyness of a roasted chicken and crackling roasted vegetables, but you don’t have the time or the inclination to go through all the bother.  In our case, we also don’t have enough people in the house at the moment to eat a whole chicken.  So here is my solution.

Take a small roasting pan and a handful of vegetables you’d like to roast.  Here I have half a large onion, several small white potatoes, and a head of broccoli.

I tossed those in olive oil and seasoned them with salt, pepper, fresh rosemary, and Newfoundland savoury (thanks Fussellette!).

On top of that, I set 2 large bone-in chicken breasts.  Bone-in roasts better than bone-out, trust me. In a small bowl I mixed together salt, pepper, Old Bay seasoning, and some dry mustard.

Then I added a little lemon juice to it to turn it into a paste.

This paste I brushed on top of the chicken breasts.

Then I roasted everything (in my toaster oven, no less) at 400°F for about 30 minutes, stirring the vegetables occasionally, until the chicken was cooked through and the juices ran clear.  I served it with some Vidalia onion relish that really helped to pick up the flavours. Yum.  Rustic comfort food for two!

Spinach and Mushroom Stuffing

We made this for our Canadian Thanksgiving celebrations, but maybe the next time you cook up a turkey (say, for American Thanksgiving, or Christmas, or various other turkey-related feast days), you could try this stuff(ing) out.  You can make it all the day before and chuck it together at the last minute, which is awesome for big dinners.  It’s also the kind of stuffing that doesn’t actually go into the bird, so you can feed it to vegetarians, too!

Start with your bread.  You can buy bags of pre-cut, pre-toasted bread chunks specifically for making stuffing, but I kind of like to make them myself, because I can decide what kind of bread I’m going to use in my stuffing.  Here I used a loaf of Italian sourdough.

I ripped each slice up into bite-sized chunks and spread them out across two baking sheets.  Shove them in your oven and bake them at 350°F until they’re dried out and lightly toasted, about 12 minutes.  Make sure to stir them occasionally.

Dice up about a pound of fresh mushrooms.  The wilder the better.  Unfortunately all we had around were some oyster and regular white mushrooms, but feel free to experiment.  You should have about 9 cups diced mushrooms when you’re done.

Chop up as well 2 large onions, so you’re left with about 3 cups chopped onions in total.

And while you’re at it, go to town on 4-5 stalks celery, ending up with about 2 cups chopped celery in total.

Find yourself some herbs.  These were all growing in our fall garden: sage, parsley, and thyme.  I thought about adding some rosemary to add to the “Scarborough Fair”-ness of the whole thing but managed to restrain myself.

Chop up a couple bunches of each.  You can never have too many fresh herbs in your stuffing, so just go with what feels right.

Dump 1/4 cup of butter and a tablespoon or so of olive oil in a large skillet and melt over medium heat.

Plop in your mushrooms and sprinkle them lightly with salt and pepper.  Sauté those suckers until they’re all squishy and starting to brown, about 8 minutes.  Dump them in a large bowl for now.

Slide another 1/2 cup butter into that skillet and let that melt.

Add in your onions and celery and cook, stirring, until the veggies are tender, probably 12 minutes or so.

Sprinkle in your herbs and cook for another minute.

Then plop in a whole package (5oz) fresh baby spinach.  Toss in the skillet (maybe use a lid) until the leaves are just wilted.

Chuck all that stuff into the bowl with the mushrooms.  If you’re making this ahead of time, this is where you stop.  Let the stuff cool, cover it, and bung it in the fridge overnight.

When you’re ready to get this on the go, preheat your oven to 350ºF and butter a large casserole dish or 9″ x 13″ baking pan.  Whisk 2 eggs and some salt and pepper in a bowl.

Pour in 1 cup low sodium chicken broth (you may need more if you find it dry) and stir that around.

Toss your bread bits with your vegetable mix and pour your broth/egg stuff over top, stirring to make sure it makes it all the way through.

Jam that into your baking dish and bake without covering until it’s brown and crusty on top, about an hour.  Let it stand a few minutes before serving (like, take it out when you start to carve up your bird and you’re set).

Creamy Pasta with Roasted Squash and Sauteed Mushrooms

I think this dish will make your Friday night, especially if it’s one of those nippy nights that is a portent of cold evenings to come.  This will serve a family of six happily.  Here’s how I did it, but feel free to add your own flair.

To begin with, roast 2 heads garlic and half an orange kabocha squash with olive oil and salt and pepper at 450°F for about 40 minutes.

While that’s on the go, dice up 2 small onions, and slice up a whole package of white mushrooms.

And grate a 150g package of asiago cheese.

When the squash is roasted, chop it up into little cubes after peeling off the skin.

I popped the roasted garlic cloves out of the head and sliced them up as best I could.

Here I defrosted about 2/3 cup of the frozen pesto we have on hand (if you grow a lot of basil, you make a lot of pesto).

Now, this is not a sauce you want to make well in advance.  I suggest making it right before you serve it and your pasta water is already on the boil.

In a skillet, melt a knob of butter with a dollop of olive oil over medium high heat.

Add in your mushrooms and sautée them until they’re browned.

Chuck those mushrooms in a bowl for now.

Add your diced onions to the skillet and cook until softened.  Then you can chuck the mushrooms back in, together with your garlic and roasted squash.

Give that a stir.  Already it smells amazing.

Then chuck in your pesto, as well as 4oz (half a 250g package) plain cream cheese.  Stir that until it’s all melted and lovely.

Pour in about 3/4 cup whipping cream, as well as 1 cup milk (or any combination of dairy you wish — that was just the amount of cream I had to get rid of).

Add the cheese and stir until melted and incorporated.

Toss with your cooked pasta and serve immediately.

You can garnish it with whatever you wish! Even nothing!

Wingin’ It Wednesday: Butternut Squash Soup

I had a craving for a roasted vegetable soup, and my parents picked up a variety of squashes from the local farmer’s market, so I grabbed the nearest butternut and I got started.  I love any excuse to roast vegetables, so preheat your oven to 450°F and get some pans ready.

I sliced up a butternut squash and set it on a baking sheet.  Actually, it took two baking sheets (butternut squashes have a lot on them).  I also cut the tops off 4 heads garlic and chucked them on a sheet as well.

I had about 4 or 5 parsnips that I scrubbed and cut up as well to be roasted. They’ll add sweetness to the mix. This is gonna be a sweet soup.

Drizzle all yo’ roasty goodness with olive oil and salt and pepper and roast everything for about 45 minutes, or until they’re nice and crusty on the outside and you can jab a fork in them easily.

The parsnips should be squishy in their innards as well.

You’re going to want to wait until the garlic has cooled before you pop the sticky cloves out with your fingers.

While that’s roasting or cooling or whatever, chop up about 2 large onions and plop them in a frying pan with some butter and some olive oil and cook them on medium low until they start to caramelize.  This will make them lovely and sweet.

Peel the roasted squash (or use a big metal spoon to scoop it out of the skin, like I did) and plop it in a big mother of a pot, together with your caramelized onions, your roasted parsnips, and your roasted garlic.

Top the pot up with some stock.  I ended up using 3 cartons (at 900mL each) of chicken stock.

Bring that to a simmer, stirring to break up the squash a bit.  Season with salt and pepper while you’re waiting for it to bubble.

Once it starts to bubble, leave it for a few minutes, then remove it from the heat and have a go at it with the immersion blender.  BRRRRRRRZZZZZZZZZHT! Season with a bit of nutmeg to taste.

Serve with more sprinkled nutmeg, a dash of plain yogurt or sour cream, some chives, or just plain Jane like this!

Soy-Dijon Roasted Chicken Thighs

I found this recipe online and halved it for a quick fall dinner to showcase a home-grown squash given to us by our neighbours.

Preheat your oven to 350°F.  Set 6 chicken thighs (with bones and skin still on) in a baking dish.

Mix together 3 tablespoons soy sauce, 3 tablespoons dijon mustard, 2 tablespoons lemon juice, and 1 tablespoon olive oil in a small bowl.

Pour that over the chicken, turning the thighs to coat them completely.

Mix together 2 tablespoons fines herbes (or an acceptable substitute — I used half Newfoundland savoury and half herbes de provence) and 2 teaspoons fennel leaves.  Add in some salt and pepper as well.

Sprinkle that evenly over your chicken and cover it with foil. Bake the chicken like that for 45 minutes.

Remove the foil and baste your lovely thighs in the juices they’re producing.  Scrape the bottom of the dish a bit to make sure nothing is getting stuck there.

Pour 1 cup chicken stock into the dish so the tops of the chicken thighs are still exposed but they are otherwise happily bathing in broth.  Bake that for a further hour, and let the tops caramelize.

When they’re ready, drain the juices into a gravy boat to serve separately, and have some lovely fall vegetables (like this roasted squash) as a hearty side.

Turkey and Leek Pie

While you’re spending the day prepping for your big turkey feast (or, if you celebrated yesterday, cleaning up afterwards), why don’t you consider what you can do with the leftover bits of that big bird?

I cooked this little baby up after watching a Jamie Oliver Christmas special on the plane home to Ottawa last December, and I served it to the lovely folks at our annual potluck.  It’s super easy, super tasty, and a great way to eat up all that leftover turkey.  And the best part about Jamie Oliver is he’s big on improvisation.  If you watch the videos for his recipes they never end up matching the recipes themselves, and that adds immensely to his charm.

Make sure you have a good package of unthawed frozen puff pastry lying around. I get the President’s Choice brand stuff and it comes in two blocks, which is perfect for our purposes here.

Then you’ll need 2kg leeks.

Leeks are super dirty. My mother told me that as the leeks grow they bury the stems in more dirt in order to keep that stem as pale and tender as possible.

This means you’ll need to clean them well. I find the easiest way to do so is to cut off the scraggly top ends and then slice the whole thing in half lengthwise. Pop those babies in a sink full of water and swish away until all the dirt is gone. Then give them a good shake to drain out the excess water.

Now, chop up those leeks. Make the pale ends a bit chunkier, but slice the tougher green ends up really thin.

Now, take a large, fat saucepan with a lid and chuck in the leaves of about half a bunch of fresh thyme.

Chop up a couple of slices of nice bacon, add a glug or two of olive oil, and cook that for a wee bit on high to medium-high.

Pour in your chopped leeks and let them cook for about three minutes on high.

Then add in some salt and pepper, pop the lid on, and turn the heat down to medium. Let that cook for about thirty minutes, stirring every 5-10, to make sure nothing sticks.

While that’s on the go, chop up your leftover turkey. You’ll need about 800g grams of turkey, chopped or torn into big chunks. Light meat, dark meat, whatever floats your boat. I like half and half, because the dark stuff has more flavour. If you have leftover stuffing it will make a great contribution as well. Huck that into your leek pot when the leeks are done.

Sprinkle on 2 tablespoons flour and stir that to fully combine it with the leeks and turkey.

Then add in 2 pints of stock — turkey, chicken, vegetable, mushroom, whatever you want.

And 2 heaping tablespoons crème fraîche or sour cream (or even plain greek yogurt if that’s what you have).

Give that a good stir and bring it back to a boil for a minute. Add more salt and pepper to taste if you like, then turn off the heat.

Pour your leek mixture through a sieve into a pot to get some lovely gravy out of this. Removing the gravy now will also make sure your pie doesn’t end up soggy, and if you drain it directly into a pot then you can easily heat it up before you serve it.

Preheat your oven to 375°F and lay your leek mixture out in a buttered 9″ x 13″ baking dish.

Dust a work surface with flour and roll out a segment of pastry so that it is a few inches larger than your pan size on all sides. If you just have one piece of pastry, then roll it out so it’s double the pan size (you will then fold one side over the other).

Crumble some chestnuts and fresh sage leaves over the pastry (or half the pastry if you’re folding).

Fold the other half on top or roll out the other piece and place it on top of the first and press down a bit to seal the chestnuts and sage inside.

Lay the pastry across your pan and tuck the ends in underneath the mixture on all the sides.

With a sharp knife score the whole pastry surface diagonally.

If you wish you can put an egg wash on at this point by beating an egg, adding a pinch of salt, and brushing that over the top of the pastry, but I didn’t bother. Bake for 30-40 minutes, or until your pastry is puffy and golden brown. Serve warm with the reheated gravy. It is so excellent.

Mid-September in Ottawa is when the garden tomato harvest is at its peak.  For as long as my parents have lived in this house, they’ve had more tomato plants and therefore more tomatoes than they really know what to do with.  This year, however, was a different story.  Having spent a large chunk of last winter and spring in Florida, my parents got their plants in too late to have a particularly good yield.  In previous years, my parents have given plants and tomatoes to everyone who will take them.  This year, those recipients are paying them back.  So the next two dishes this week will be tomato based while I try to get the tomatoes used before they go soft.  This is my second tabouleh recipe here on the blog (first one is here), and this one is more or less traditional, though I added a few extra spices just for fun.

Start with 1 cup bulgur, and about 3 tablespoons olive oil.  Stir those together in a medium-sized bowl.

Cover the oily bulgur with 2 cups boiling water; give it a stir and set it aside for at least 15 minutes.

Now grab yourself an enormous hunk of fresh parsley (probably about 2 cups total). We have two kinds in our garden — this fluffy one:

and this more flat-leaved variety.

You also want a hunk of fresh mint (about half a cup).  This has seen better days (it was the only survivor of our weed-burning escapade at the back of the house), but it’s still good.

I was feeling lazy so I chucked all those things in a food processor.

Now comes the annoying part: you have to dice AND SEED all your tomatoes.  If you don’t seed them then your tabouleh will be mushy and that’s just gross.  I used about 10 medium-sized tomatoes for this particular recipe.

When you’ve got all the tomatoes done, season them with salt and pepper.  I also threw in a dash of ground coriander and another of cayenne.  I figured the coriander is also a parsley sort of thing so it could only boost the flavour.

Chuck in your other herbs.

Your bulgur has by now absorbed all the water that it’s going to, so you’re going to need to drain it.

Use either cheesecloth or a fine mesh strainer to get as much water out of it as you can.  I find the cheesecloth helps because I can just pick it up and squeeze it.

Add the bulgur to your tomato mix and add a few dollops more olive oil.  Stir in lemon juice to taste.

Serve garnished with a piece of parsley, or stuff a bunch into a pita for a quick snack!

Three Bean Mexi Salad

This is a quick and colourful summery salad you can serve at any time, as a side dish and as a standalone meal. It’s easy and appetizing and full of flavour. And, as it’s Labour Day, you should take a break, and enjoy this simple salad.

Start with your beans. Crack open a can each of black beans, red kidney beans, and white navy beans. Or whatever beans you like, really.  Drain them and give them a rinse in a colander. Set that aside while you chop up some veg.

Chop up 2 red peppers into whatever size you think is appropriate for a bean salad.  Who am I to tell you what to do?

Do the same with 2 jalapeños.  Be careful not to touch your eyes while you’re doing this.  I like to mince mine up super fine.

Chop up as well 1 red onion.

And slice up about 4 green onions.

Huck all those things in a bowl with your beans, and add to that about 1 1/2 cups frozen corn kernels.

For the dressing, start by mincing up a huge bunch of fresh cilantro.

Drop that in a bowl with a few cloves minced garlic and the juice and zest of 1 lime.

Add to that 2 tablespoons granulated sugar, a dash of salt and pepper, another dash of hot pepper sauce, and 1 tablespoon ground cumin.

Mix that all together, then add in 1/2 cup olive oil and 1/2 cup red wine vinegar.

Dump that on top of your salad and toss until well combined.

This salad is best if you cover it and leave it in the fridge overnight to let the flavours mingle.  Serve it cold.

Turkey Meatball Rigatoni with Pesto

Happy Canada Day!  Today is a holiday here in the Great White North.  Last Monday was also a holiday for those of us in Newfoundland, and I cooked this recipe up on that particular day.  We are trying to consume the contents of our pantry and freezer before we move (and we’re doing a pretty good job) so this gets rid of a chunk of the stuff in there.

Anyway, my landlord is doing some renovations to her house, which is directly behind ours, and she needs our yard for access.  The first thing I said to the Pie when he got up and joined me in the kitchen last Monday morning was, “Oh good, you’re clothed — there’s a man in our tree.”  And there was.  And there were several in the backyard.

And all the shops were closed so we had to make do with what was around for our dinner.  So start making up some meatballs, okay?  Preheat your oven to 375°F and grab a baking sheet. Ignore the small highway being created in your backyard.

Finely grate up a medium-sized carrot.  Chuck that in a bowl.

Slice up some green onions.

Then dice ’em.  Chuck those in the bowl with the carrots.

Then add a few spoonfuls minced garlic.

Plop in 2 eggs.

And about 1/2 cup panko bread crumbs.

Give that a thorough stirring.

Add in some ground turkey, seasoned with salt and pepper.

Stir that all together, then use your hands to squish it into golf-ball-sized meatballs.

Plop those onto your baking sheet and let those cook in the oven for 20 minutes.

To test for doneness, cut one open and see that there’s no pink inside.

Grab yourself some pesto, too.  However much you want.  I like lots.  You can buy it or make it yourself, it’s up to you.

And slice up some tomatoes.  I used grape tomatoes here.

Boil up a pot of water and cook up some pasta.  We used rigatoni, because it was something we needed to get rid of.

Drain the pasta.  Dump the tomatoes and the meatballs into the pot with the pasta.

Add the pesto.  Stir like there’s no tomorrow.

EAT IT FOR BREAKFAST: Quinoa Oatmeal

I love, LOVE reading Thug Kitchen.  Believe it or not, this is actually how I cook most of the time.  With very colourful language.  I tend to tone it down so as not to offend your more delicate sensibilities.  However, you may find that sometimes the tenor of my writing changes a bit.  Usually you can blame that on a binge reading of Thug Kitchen, or a quick episode of Epic Meal Time.  If I had my own internet cooking show, you can bet there would be lots of yelling and throwing of things.  And probably more dropping-things-on-the-floor-then-picking-them-up-and-putting-them-back-in-the-bowl than you were really prepared for.  Because that’s real life for me.

Anyway, I’m a firm believer in breakfast.  Yup, I’m one of THOSE.  Don’t even argue with me.  And I love me my parritch, so this quinoa oatmeal with steel cut oats appeals to the hippy highlander in me.

Start with 1/2 cup quinoa, and give that a good rinse in a sieve so that you wash off all the bitterness.

Put 4 cups water in a kettle and set that on the stove to come to an almost boil (you’ll thank me for the shortcut later).

Now you’re going to plop a bit of olive or coconut oil (1 teaspoon) in a saucepan, followed by 1 cup steel cut oats.

Stir that around on medium heat until the oats start to smell nice and toasty.

Chuck in the quinoa and the water and bring it to a boil (which will be almost immediately because you already almost boiled the water, remember?), then lower it to a simmer and let it cook as it is for about 20 minutes.

Stir it occasionally so it doesn’t burn, but don’t fret too much about it.

Add in about 1/2 cup of whatever kind of milk you like and turn off the heat.

Serves 4, garnished with fruit and nuts or raisins and brown sugar or whatever floats your boat!
