As you may have figured out by now, my birthday gifts to my friends and family members usually end up being the birthday cake of their choice – no cake too elaborate, no tower of layers too high. We have had a few memorable ones over the years, but this one sticks out because when I asked Atlas which cake she’d like for her birthday a couple weeks ago, she said she wanted a strawberry shortcake. And I realized that I had never actually ever made this classical and simple dessert delight. So I decided to go right back to the cake’s roots and make it as classic as possible, following this recipe from Fine Cooking.

Strawberry shortcake, in its traditional form, is not really a cake at all. It’s more of a sweet sandwich in a biscuit (“short” cake indicating that the cake isn’t really made with any leavening agents and ends up pretty dense and flat). This recipe also doesn’t really lend itself well to making ahead, as it must be assembled immediately before cooking, but it’s simple enough that this is not a huge deal.

Let’s start with our dough, shall we? I did make the dough ahead of time, and kept it in the fridge, wrapped in plastic, until I was ready to bake it.  Grab 2 cups unbleached all-purpose flour, 1/3 cup plus 1 tablespoon granulated sugar, 2 1/2 teaspoons  baking powder,  and 1/4 teaspoon baking soda (leavening agents, I know, but give me a break). Whisk those around in a bowl until they’re nice and mixed.

Now grab yourself 1/2 cup cold butter and cut it into little cubes. Tip the butter into the flour and use a pastry cutter to blend it all up until you have a mess of coarse-looking flour with pea-sized bits of butter throughout.

In another bowl, mix together 1/4 cup whipping cream, 1/4 cup buttermilk (why oh why don’t they sell buttermilk in smaller cartons?), and 1 large egg.

Make a well in the centre of your flour/butter mixture and pour in the wet ingredients.

Stir that around with a fork until you get a shaggy dough.

Then knead it a little bit with your hand until it all comes together.

At this point I wrapped it tight in plastic wrap and shoved it in the fridge overnight, but if you want to bake it right away you totally can.

Ideally the biscuits are made so that they’re still slightly warm when you assemble them with the strawberries, but you can make them up to four hours ahead of when you need them. Just make sure to col them completely and then shove them in an airtight container until they’re needed. So when you’re ready to bake,  preheat your oven to 425°F, line a baking sheet with parchment paper, and lightly flour a nice surface to work on. Grab your rolling pin as well.

Roll the dough out into a rough rectangle about 3/4″ thick. The original recipe calls for making six biscuits from this dough but those seemed absolutely ginormous so I cut the rectangle into eight biscuits instead and even then they were pretty big.

Lay the cut biscuits on your baking sheet and brush with a tablespoon of whipping cream and sprinkle with a bit more sugar.

Bake those for 10-15 minutes, until golden brown.

While they’re baking and cooling slightly, you can do your strawberries. You can prepare the strawberries a couple hours ahead of time as well, because they need to macerate (i.e. sit cut up in sugar) for at least 30 minutes. The recipe calls for 1lb fresh strawberries, but I probably used about 1 1/2lbs, and we all agreed later that I could have used the whole 2lbs that I bought. You can never have too many strawberries in strawberry shortcake.

Anyway, wash and hull the berries, and then take about one third of them and use a potato masher or pastry cutter to mush them up in the bottom of a bowl.

Slice the rest of the berries and plop them in the bowl with the strawberry mush.

Tip in 2 tablespoons granulated sugar and give that a stir. Leave that to sit at room temperature for at least 30 minutes. At this time you might as well also chuck a bowl for whipping cream into the freezer, along with whatever beater you are going to use. Cold utensils make for a better whipped cream.

Now you’ve finished your lunch or dinner and it’s time to assemble the cakes. Grab your bowl and beaters out of the freezer and pour in 1 1/2 cups whipping cream. Add vanilla and sugar to taste. I don’t have any photos of this because the Pie did it while I was doing other things.

Use a serrated knife to cut all the biscuits in half horizontally and set the bottoms of the biscuits on your serving plates.

Spoon on a generous amount of strawberry goo. It’s okay if it spills off the edges – it looks all artistic that way.

Add a generous dollop of whipped cream to the mix.

Then plop the biscuit top on.

Add another scoop of strawberry goo, followed by more whipped cream.

Five-Minute Frittata, for Two

This is my favourite quick dinner when you want something a little bit better than a cold bowl of cereal but you want to apply pretty much the same level of effort. This dish serves two but I was so hungry after all my efforts in the garden that I ate the whole thing myself.

First I grabbed some fresh herbs out of said garden. Then I preheated my oven to broil and grabbed an oven-safe nonstick skillet. Nonstick works best for this particular eggy dish, but you have to make sure that it has been approved for use in the oven so you don’t end up killing yourself with chemicals or burning the handle off.

I chopped up the herbs.

Then I grabbed a tomato and chopped and de-seeded it as well.

Now you can start heating up your skillet, with a nice big pat of butter in it to melt.

Then I cracked 4 eggs into a bowl. I proceeded to beat the crap out of them.

Add in a big dollop of sour cream. You can use milk or cream but I have recently discovered that sour cream in eggs makes them light and fluffy and flavourful so I like using it.

Then I poured the mixed eggs into the hot skillet.

Let that sit for a moment.

Then start pulling the egg away from the bottom of the skillet. You’re not really stirring the egg, so much as exposing more of the raw stuff to a hot cooking surface.

Stop scraping before all the wet stuff is scrambled.

Now you can top it with all the goodness you’ve prepared. This is salt, pepper, chopped herbs, tomatoes, and parmesan cheese.

And then go ahead and shove it under the broiler for about two minutes, until all the wet egg is now solid. Please don’t judge me for my dirty oven.

You can see I actually overdid this one a little bit.

Then you hold the pan over a plate and start to slowly tip it so the whole thing starts to slide out.

When you’re about halfway out, lift the pan so that the second half of the egg flips over and covers the first half.

Top with more pepper and garnish if you like.

It was Krystopf’s birthday last weekend, and, as I do for the fam-dambly, I take on the cake-making duties as a present – the birthday person gets to pick whatever one they want and I do my best. Krystopf picked a Guinness Chocolate Cake, which is a very grown-up sort of cake (he did turn 38 after all, so I *suppose* he’s a grown-up).

For the cake:

In a saucepan over medium heat, melt 1 cup butter.

Then grab some Guinness.

Pour 1 cup Guinness (or other stout if you prefer). Keep the rest for yourself. It’s never too early for drinking Guinness, especially if you’re baking.

Pour the Guinness into the butter and stir it up.

Allow that to come to a foamy simmer before removing it from the heat.

Whisk in 3/4 cup unsweetened cocoa powder.

Let that cool for a little bit.

In the meantime, preheat your oven to 350°F and butter and flour a 9″ cake pan. This one is springform because I find with fancy cakes it just makes everything easier.

Now, in a large bowl, whisk together 2 cups flour, 1 1/2 teaspoons baking soda, and 1 cup sugar.

In a smaller bowl, beat up 2 large eggs and tip in 2/3 cup sour cream.

Pour your no-longer-hot chocolate Guinness butter mix into the egg and sour cream mix and stir it up.

My whisk has a much heavier handle than the whisk part and I always have to remember to take it out of the bowl when I let go of it. This ONE TIME, I forgot. That is chocolate all over my floor.

Now pour your chocolate goo into your flour and whisk until fully combined and smooth.

Pour that in your cake pan and shove it in the oven. The recipe Atlas gave me said it would take 35-40 minutes, but I found it took closer to 60 minutes to cook all the way through.

For the filling:

While that’s on the go, you can make your filling. Slam 8oz bittersweet chocolate chips into a heatproof bowl and top with 2/3 cup heavy (whipping) cream and 2 tablespoons butter.

Plop that over a pot of simmering water and melt, melt, melt!

Set the finished ganâche aside to cool until it’s the consistency of pudding.

For the frosting:

Now you can work on the frosting. In the bowl of an electric mixer, dump 1/2 cup room temperature butter and whip that until it’s pale and creamy.

Slowly beat in 3-4 cups icing sugar.

If it gets too stiff, add in 3-4 tablespoons Bailey’s or other Irish cream liqueur.

I also found a little dribble of whipping cream got it to that perfectly creamy, spreadable consistency.

By this time hopefully your cake is gorgeously baked and entirely cool. If not, then you’ll just have to wait a bit longer.

When it’s ready, slice the cake in half horizontally.

Take a small spoon to the bottom half and scrape away a bit of the inside.

Use your fingers to press down, creating a shallow bowl.

By now your ganâche should look like this.

Pour that gorgeousness into the little bowl in your cake. I didn’t use all the ganâche here because otherwise I was afraid it would run over the sides when I put the top on. And it did that anyway, so in future I would use all the ganâche and purposely make it run down the sides.

Put the top on the cake. You can see that the ganâche is already peeking out.

Spread your icing thickly on top. It’s already pushing the ganâche out the sides so I decided to forego icing the sides altogether and just do the top.

Then it kind of looks like a poured Guinness with a nice frothy head.

The final touch was shaving a bit of bittersweet chocolate on top. Serve to your brother or your friends and family. They’ll all enjoy it!

Mini Wonton Quiches

I finally did get to have that finger-food brunch I was trying for. These wonton mini quiches were a big hit.

I enjoyed cutting up all the vegetables super small to fit in the tiny muffin cup spaces.

I did scoop the seeds out of the tomatoes to avoid mushiness.

And I couldn’t decide on cheeses, so I went with both.

I grabbed some fresh herbs from my very own backyard, because it’s actually spring now.

In the end I had one set of quiches with mushroom, spinach, chives, and goat cheese, and the other was tomato, onion, cheddar, and cilantro. For amounts I kind of winged it, sorry.

Anyway, preheat your oven to 350°F and line your muffin tins with two wonton wrappers each. Align them so they are at 45° angles to each other for the largest surface area. I didn’t do this but I would recommend greasing the muffin tins before you do this.

Then I stuffed the tins with my vegetable-cheese mixtures.

Then I started cracking some eggs. For 24 mini quiches I used about 14 eggs. I also added in a few tablespoons cream, some salt and pepper, and some grated parmesan. Gave that a good mixing.

Then I ever so carefully poured the egg goo into the muffin cups.

It’s hard to get it so it doesn’t go around the seal of the wonton.

I baked them for about 15 minutes, until they were cooked through.

Because I didn’t grease the pan it took some persuasion to get them out.

Banana Oatmeal Bran Muffins

I’m not a huge fan of bran muffins, to tell the truth. I mean, the older I get the more I appreciate their functionality in my diet, but they’re still not a favourite. The Pie absolutely LOVES them, though. I swear he’s actually seventy. So I thought I’d play around with the mixture a bit and see if I could come up with something that still had all the benefits of bran with a bit more of a flavour, and these not-too-sweet muffins did the trick.

These can also be frozen in their unbaked form for cooking up later, which is handy for me as I am yet again filling up friends’ freezers in anticipation of future little ones. All you do is scoop the mixed batter into cupcake liners, freeze them, and then add five minutes to the baking time when you bake them from frozen. Easy peasy.

But of course you want to try some of these puppies right away. So preheat your oven to 350°F and line some muffin tins with liners (or give them a good spraying or buttering, whatever suits). I doubled this recipe (so I could freeze some) so don’t be alarmed at the massive amounts in the pictures. Deep breaths.

In a bowl, whisk together 2 cups all-purpose or whole wheat flour, 1 cup oats (rolled, not steel cut), 1 cup bran, 2 tablespoons sugar, and 1 1/4 teaspoon baking soda. That’s your dry bowl.

For your liquids you’ll likely need a bit more preparation. First, I had some bananas in the freezer that needed thawing out, but when they were good and squishy I went ahead and mushed up 3 ripe bananas.

You’ll also need some buttermilk. If you don’t have buttermilk you can simply sour regular milk by adding 1 tablespoon lemon/lime juice or vinegar to every cup of milk you use and letting that sit for about 5 minutes. For this recipe you’ll need 2 cups buttermilk/soured milk. I also opted to switch out the traditional molasses used in bran muffins for 1/2 cup honey. In addition to that in your liquid bowl you’ll need 1 large egg and 4 tablespoons melted butter.

Mix both the liquids and the dry stuff well, but SEPARATELY. The whole trick with muffins is not mixing them too much. I think in this case with me trying to incorporate the bananas I ended up overmixing but you should try not to do that.

Your batter should still be pretty lumpy when you tip in 1 cup raisins or nuts (optional).

Scoop your batter into your prepared tins and either freeze them or bake them for about 25 minutes, until a toothpick inserted in the centre muffin comes out clean.

Let those cool in the pan about 5 minutes before scooping out to a wire rack to cool completely.

Flower/Foliage Easter Eggs

After our success with the Tie-Dyed Easter Eggs last year, Cait and I decided to make it a tradition, just like our Christmas baking, and do it again this year. Obviously, we would do something different  (the tricky thing about this blog is I can’t ever really do the same thing twice).

So after looking at this post and this post on dyeing eggs with natural dyes and using plants to make impressions on them, I knew this was something we needed to try – FOR SCIENCE. However, with Indy now part of the family and requiring our 100% attention at all times to avoid him being eaten by Gren, I knew we didn’t have time to set up natural dyes for the eggs. We would do that next year.

I had some Ukrainian style pysanky dye that I purchased when Cait and I had a different plan for science-y Easter eggs (maybe we’ll do that another year as well), so I figured we’d use that instead.

So all you need for this is whatever dye you’re going to use, some rubber bands (again, leftover from the Tie-Dye incident), some cheap or old pantyhose (the Pie bought this for me at the Dollarama and said it was an odd experience), and some flowers or plants. The plants that work the best are really floppy ones that are thin and pliable.

Use scissors to remove the legs from the pantyhose and cut them into small sections large enough to wrap around whatever eggs you’re using.

You can either leave them as a tube or slice them open – I found it was easier to open them up.

Although I left the toes as-is.

Oh and you need eggs, did I mention that? We’re going to hard-boil them in advance. Don’t worry if your eggs have those pink date stamps on them — that dye will come off in the boiling process.

Set all your eggs in a pot of water and bring it to a boil, then turn off the heat and remove the pot from the burner and leave it with the lid on for about twenty minutes.

Now you can work on your dye. Cait and I picked out four colours to use.

I followed the instructions on the packet, using distilled water (leftover from our soap extravaganza) and vinegar to prepare my dyes.

Then I had to let them cool. And just a warning, powdered dye gets everywhere, as I learned during my Tintex experiment.

Then all you need to do is take a piece of flower or leaf and put it on your egg. This is some cilantro that I’m growing on the kitchen table.

If you dip the leaf in water first before you smooth it on it will stick better. Cait and I also suspect that the thin layer of water between the leaf and the egg provides a bit of surface tension or something science-y that will serve as a barrier for the dye later on.

Then all you need to do is wrap it tightly in a piece of the pantyhose.

The tighter you wrap it the wider the spaces between the strands of nylon and the easier it will be for the dye to get through – also it will press the plant closer to the surface of the egg and be a better dye blocker.

Secure the ends with a rubber band.

We hauled ours out after a while and gave them a rinse – we probably should have let them dry in situ but we were under a time constraint.

As you can see the ones with the floppy thin plant materials worked the best. The one on top here is a few sprigs of tender rosemary and we were both quite pleased with how that turned out.

All in all, though, this experiment could have gone better. Part of the issue is that we couldn’t really find any nice slender foliage as Ottawa is still covered in snow. This is definitely an activity better suited for a more southern climate.

Cranberry White Chocolate Scones

I meant to make these back when I made the Savoury Sunday Scones but I ran out of time. So I just had a package of defrosted cranberries sitting in my fridge for AGES. I felt bad about those poor cranberries, so last weekend I whipped up a couple batches of this recipe from Chew Out Loud, one to eat right away, and the other to freeze unbaked as a giftie for Cait.

First, make sure you have 1 cup butter sitting in your fridge (or better yet, freezer).

Preheat your oven to 400°F and start with 4 cups flour (if you think that’s a lot of flour, imagine how much I had when I doubled the recipe. Okay, you don’t have to imagine: you can just do the math, I know). Whisk that together with 2/3 cup granulated sugar, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1/2 teaspoon baking soda, and 1 teaspoon salt.

The original recipe calls for 1 cup sour cream, but I only had a very little bit. So I thought I’d add in some yogurt, but I only had lemon meringue flavoured yogurt (still, citrus and cranberry are a great combination). But I didn’t even have enough of that. So I added in some dregs of whipping cream I had lying around.

I ended up cleaning out all three containers.

So. In a bowl, mix together 1 cup sour cream (or your dairy Frankenstein equivalent), 2 large eggs, and 4 teaspoons vanilla. Set that aside for a minute or two.

Grab your super cold 1 cup butter and grate it into your flour mixture. Yes, grate it. It’s oddly satisfying to grate butter. I always enjoy it, though I hate grating cheese.

Use a spoon to stir it into the flour. I went ahead and used a pastry cutter on it as well just to ensure I didn’t have huge clumps of grated butter in places where they shouldn’t be.

Stir in half a package of white chocolate chips (I used a whole one because I doubled the recipe).

Now tip in your liquids and stir them until just combined.

Add in half a package of fresh cranberries (again, I used a whole one because of doubling the recipe).  Stir those into the mix.

I tipped the whole thing out onto a work surface to squish and kind of knead gently into a cohesive mass.

I split it into four balls (two if you’re not doubling).

I flattened the balls into disks, which I cut into 8 equal wedges.

Whisk an egg in a small cup with a tablespoon of water and brush the egg wash over the scone wedges. Sprinkle with a bit of sugar.

Bake those suckers on parchment-lined baking sheets for 14-17 minutes, until they’re a nice pale brown all over. Serve warm!

If you’re Canadian, you’ve probably had a Nanaimo Bar once or twice in your life. If you’re not Canadian, you probably SHOULD have a Nanaimo Bar once or twice in your life.

My sister-in-law Mags sent me this recipe as a not-so-subtle hint about what kind of birthday cake she’d like this year (her birthday was February 15th). We usually celebrate her birthday jointly with her dad’s, Papa John, whose birthday is on February 19th. But with a bunch of travel on all sides, we ended up postponing their birthday celebrations until this past weekend, which was MY birthday. So this is a joint cake for the three of us. And it’s amazing.

Preheat your oven to 350°F. Grab a food processor and chuck in 5 tablespoons cocoa powder, 3 tablespoons granulated sugar, 1 1/2 cups graham crumbs, 1/2 cup chopped walnuts, and 3/4 cup dried coconut.

Give it a good whazzing, then drizzle in 4 tablespoons melted butter and 1 teaspoon vanilla and whaz it again, until you get some crumbly mixture.

Take your crumb mixture and dump it into a 10″ springform pan. Press the crumbs into the bottom and a little up the sides, making sure to press extra hard in the corners (I didn’t and it was a little too thick there, so that’s why I am warning you).

Shove that into your oven and bake it for 5 minutes. When you pull it out, leave the oven on and shove in a large (9″ x 13″) pan of warm water and put it on the rack below where you will be cooking your cheesecake.

Now, in the bowl of a stand mixer, chuck 4 250g packages plain cream cheese (remember that room temperature cream cheese makes smoother cheesecake). Beat that up until it’s smooth and lovely.

Then, one at a time, crack in 4 large eggs, scraping down the sides of the bowl and beating the whole time.

Now you can chuck in 1 1/2 cups granulated sugar, 1/3 cup sour cream, 1 teaspoon vanilla, and 3 tablespoons vanilla custard powder.

I used Bird’s custard powder here, because that is all that is traditional and right in the world. Beat that up until smooth.

Pour the mix into your baked crust above your pan of water and bake for 1 hour.

When it’s done, turn the oven off and crack the door just a little bit and wedge it with a spoon. Leave that for 1-2 hours until the cheesecake is room temperature.

Don’t fret about that crack. It’s not a big deal. Transfer the cake to a nice plate with care. Chill the cake for a little while.

To make the lovely ganache that goes on top, toss 1 cup cream and 1 cup chocolate in the bowl of a double boiler and heat until the chocolate melts.

Whisk until smooth, then let it cool to room temperature.

Now gently pour it on top of your cooled cake. I had a lot of ganache so I carefully guided it down the sides as well.

Yes, yes, I know it’s WEDNESDAY. But I made these on a Sunday and I like my alliteration, okay? These are a great addition to a Sunday brunch (I know this because that’s what I made them for). I used turkey bacon in this recipe but feel free to use any bacon-like product you can think of.

Start with 2 1/2 cups all-purpose flour and mix it in a bowl with 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1 teaspoon salt.

Grab 1/2 cup COLD butter and use a pastry cutter or two knives to cut the butter into the flour mixture. You can use a food processor for this if you really want, but we are going for a non-uniform texture here, so irregular chunks of butter are a plus in this situation.

Normally I use buttermilk when I make scones because it makes them nice and fluffy. But I never have buttermilk on hand because in Canada you can only buy it in 1L cartons and seeing as I don’t drink it for its own sake that’s a lot of buttermilk to have to use up. So generally I just sour my own milk. 1 tablespoon of lemon juice or white vinegar to 1 cup of milk, give it a stir, and leave it for five minutes. Good enough. Here I only needed 2/3 cup soured milk so I adjusted accordingly. You can do the math. Anyway, mix the milk with 2 slightly beaten eggs.

What you also need here is about 5 slices of cooked bacon, any kind.

Slice and dice that into wee pieces. You need about 1/2 cup chopped bacon at this point. You should probably do this first before all the other stuff with the flour and butter so that the bacon has time to cool down before you cut it up. Otherwise, there might be bad things that happen.

Harvest some green onions as well. Dice them up until you have about 1/4 cup chopped green onion.

Then grate some cheese. Any kind you like, but you need about 2/3 cup grated cheese and then add to that about 1/4 cup grated parmesan cheese as well.

Okay so now you’ve got all your bits and pieces. Add the buttermilk/eggs mixture to the flour mixture and stir until just combined.

Add the cheese, onions, and bacon to the bowl as well and continue to stir until it’s all incorporated.

Turn the mix out onto a lightly floured surface and knead gently just until all the bits and pieces are together and it’s a cohesive mass. You just want things all barely sticking together. When in doubt, under-mix.

Shape it into a disk about 1″ thick. Wrap the dough up tightly and put it in the freezer for at least 30 minutes or in the fridge overnight.

Scones cook really well from frozen, did you know that? So if you wanted to do that, cut the scones before chilling, wrap them up really well, and then chuck them in the freezer for scone-y goodness any time you want. Frozen scones make great gifts, you know.

If you’re not freezing them, unwrap your chilled dough and slice it into wedges. I aimed for 10 wedges here. You can also flatten your dough into a rectangle and cut out squares or triangles or whatever you want. Wedges are easiest for me. Preheat your oven to 375°F.

Plop the wedges on some baking sheets lined with parchment and brush them with about 2 tablespoons half and half or light cream.

Sprinkle them with a little sea salt and shove them in the oven for 15-20 minutes, until they’re puffy and golden.

Let cool only very slightly before serving warm with a dollop of butter!

White Lace Brownies

These not-too-sweet brownies are accented with a pretty “lace” overlay of white chocolate. Preheat your oven to 350°F and line a 9″ x 13″ baking dish with parchment paper (you can skip that but it makes it easier to pull the baked brownies out later).

In a bowl, whisk together 3/4 cup flour, 1/2 cup cocoa, 1/2 teaspoon baking powder, and 1/4 teaspoon salt and set that aside for a second.

In another bowl, beat together 3/4 cup vegetable oil, 1 1/2 cups sugar, and 1 1/2 teaspoons vanilla extract.

Beat in 3 eggs until smooth.

Add the egg mixture to the flour mixture and beat until smooth again.

Pour the batter into your baking dish and shove it in the oven for about 25-30 minutes, or until a toothpick inserted into the centre of the dish comes out with just a few crumbs on it.

I pulled the still-warm brownies out of the pan and set them on a rack to cool completely.

While that was going on, I melted about 3 oz white chocolate in a double boiler and let that cool as well.

When both were cool, I piped the white chocolate in an overlapping pattern onto the surface of the brownie and let it harden.

Then you just cut it into pieces and serve!
