The Pie says believes that the difference between a cupcake and a muffin is the icing, and this is never more true than in this particular recipe from Martha Stewart.

Preheat your oven to 350°F and line a muffin tray with cupcake liners.  Take a 10oz zucchini and grate it up.  You want about 1 1/2 cups grated zucchini.

In a large bowl, whisk together 1 1/2 cups flour, 1 cup packed brown sugar, 2 teaspoons baking powder, and 1/2 teaspoon cinnamon.

Stir in 1 1/2 cups chopped pecans or walnuts.

In another smaller bowl, crack 2 eggs and beat them up slightly.

Add in the zucchini, 1/2 teaspoon vanilla, and 1/3 cup vegetable oil and mix that all together.

Add the wet ingredients to the dry ingredients and mix until just combined.  You don’t want to overmix muffins, or they go flat.

This will be a very dry batter but don’t fret.

Scoop the batter into the cupcake liners and shove the tray in the oven for 40-45 minutes, until the centre cupcake/muffin tests clean with a toothpick.

Let cool in the pan on a wire rack for about 10 minutes before turning them out to cool completely.  While that’s going on you can make your frosting.

Having read the unfavourable reviews for Martha’s cream cheese frosting, I decided to go with our tried-and-true ratio instead.  In a bowl, mix together 1 250g package softened plain cream cheese, 1 cup butter, and 2 teaspoons vanilla until creamy.

Add in 1 1/2 – 3 cups icing sugar, until the texture and taste are to your liking.  If you find it too thick, thin it a bit with some milk.

Spread on the cooled cupcakes and eat them all up.  Best if eaten the day you make them.

Gluten-Free Chocolate Chip Cookies

So my washing machine has been broken for about a month now.  My landlord didn’t like the first repair quote we got so we had to get a second opinion and now it turns out that the part we need is pretty much not available anymore.  While we wait, I do some laundry by hand in the bathtub (so not as fun as it sounds) and some I do downstairs in Fussellette’s machine (which is identical to and yet works so much better than ours).  So in recompense for being a pain in her butt while I wash my unmentionables in her house, I made her some cookies yesterday.  These puppies (adapted from this recipe) are soft and chewy and you can’t even tell that they are gluten-free.  I asked the Pie how many cookies he wanted and all he did was extend his arms to their fullest, which I took to mean “this many,” so I doubled my batch, but a single batch here makes 18-24 large cookies.

Preheat your oven to 375°F and line several baking sheets with parchment paper.

If you can find oat flour for this then you’re gold.  If you can’t, take a heaping cup of rolled oats and plop it in your food processor.  Give that a go for a few minutes until you have fine crumbs.

Plop that in a bowl together with 1 cup brown rice flour, 1/4 cup plus 1 tablespoon corn starch, 1 teaspoon xanthan gum, 1 teaspoon fine salt, and 1 teaspoon baking soda and stir that up.

In the bowl of a mixer, add together 1/4 cup granulated sugar and 3/4 cup brown sugar.  Pour 1 cup melted butter on top and mix it up.

While that’s on the go, add in 2 eggs and 2 teaspoons vanilla.

Now slowly add in your bowl’s worth of dry ingredients and mix until fully incorporated.  Looks kind of runny but don’t fret.

Now slowly mix in 1 1/2 cups chocolate chips.  That looks more like it, eh?

I used a soup spoon to scoop plops of dough onto the baking sheets.

Bake for 10-13 minutes, rotating your sheets halfway through, until the edges of the cookie turn a nice brown.  The centre will not look set, but again, don’t fret.  Let the cookies set on the pan for another 2-3 minutes after removing them from the oven.

Then you can put them on a rack to cool completely.  Or you can eat them right away.  I think the choice is obvious.

Vanilla Bean Custard

Believe it or not, I still have some egg yolks to deal with.  And I love pudding.  And hopefully this won’t turn out like it did last time.  But this recipe looks pretty simple and I’m sure I can handle it.  Fingers crossed.

First we’re going to infuse our milk.  In a small saucepan, combine 1 cup milk and 1 cup heavy cream.

Take a vanilla bean and split it in half lengthwise with a sharp knife.

Use the back of the knife to scrape the little seeds into your milk pan.  Dump the empty bean pod in there as well.

Cook your milk on medium heat for about 5 minutes until hot and steamy.  Make sure to stir often, and do not allow it to boil.  Remove it from the heat when it’s ready to go and carefully remove the vanilla bean pod.

In a heatproof bowl, whisk together 4 egg yolks, 1 tablespoon corn starch, and 1/3 cup superfine (caster) sugar (you can make caster sugar from granulated sugar by whazzing it in a grinder or food processor for a few seconds).

Whisking the whole time, drizzle the hot milk over the egg mixture.  You want to add it a little bit at a time so the yolks are heated up gradually and don’t have an opportunity to curdle.

Return the whole mixture to the saucepan and heat it up once again to medium.  Stir constantly for about 15 to 20 minutes, until the custard is thick enough to coat the back of your spoon.  Don’t allow the mixture to boil or it will curdle and that will be a mess.

Remove from the heat.  You can serve this warm as a sauce on top of stuff, or cold as a pudding.  Your choice!

Pineapple Orange Buckle

Y’know, I have no idea what a “buckle” is, other than the metal object one uses to attach things with straps.  But it appears to be some kind of American dessert-like object resembling a tall clafoutis, so I’m going to roll with it.  I got this recipe from Martha Stewart.  She used mangoes, but lacking those (and unwilling to pay the $3 each price tag on them, thanks Newfoundland), I used some oranges that had seen better days and I didn’t want to waste them.

Preheat your oven to 350°F and grab yourself a 2-quart baking dish.  I’m not sure, having never made this before, if the dish should be wide and shallow or narrow and deep (like this one), but I worked with what I had.  Use some butter to grease the sides and bottom of the dish.  There are definite benefits to butter that comes in sticks for this.

Peel and core a small pineapple and cut it into smallish chunks.  I did this a few days ago and discovered that despite the aroma coming from the whole fruit, the flavour was rather disappointing — hence this dessert.  I did the same thing with 4 small navel oranges that were nearing the end of their days.  I cut off the peel with a knife and also cut out the pith from the centre, then cut the orange into eighths.

Toss those into a container and sprinkle with 2 tablespoons brown sugar.  Toss them to coat in the sugar and leave them aside for now.

In a small bowl, whisk together 3/4 cup plus 2 tablespoons all-purpose flour, 1 teaspoon cinnamon, 1/4 teaspoon baking soda and a pinch of salt.  Set that aside for the nonce.

In the bowl of a mixer, beat together 1/2 cup unsalted butter (equivalent to 1 stick) and 1/2 cup granulated sugar.

Keep going until it’s super fluffy.

Add in 2 eggs, one at a time, beating in between additions until fully incorporated. Then drop in 1 teaspoon vanilla.  As you can see, I did not measure this.  And I don’t care.

Slowly add in your flour and mix all together.

Dump all but about 1 cup of your fruit into the batter and fold it all around until it’s fully mixed. Pour the fruit and batter into your dish and add the remaining fruit on top.

Bake for 45-50 minutes, until fluffy and golden brown on top.  I was so annoyed with the fact that my Bookmark Brownies weren’t cutting properly that I may have forgotten to set the timer for this and ended up winging it.

Scoop some out and serve warm with a bit of whipped cream.  TASTY!

The best part about this was heating up a scoop of this the next day for breakfast and topping it with my favourite yogurt. I highly recommend that.

This recipe comes from a laminated bookmark I received as part of a promotional package from Chatelaine magazine.  While I was not so struck by this unsolicited mail that I wished to subscribe to the magazine, I kept the bookmark because the brownie recipe on it was gluten free with an interesting twist.  Actually this is a lie.  As soon as I’d typed in the ingredient list into this entry, I threw it out.  And was annoyed that it was unrecyclable.

Below is the original recipe for one pan of brownies.  I tripled this because I was baking for work, so ignore my photos involving massive amounts of baking materials.

First, separate 4 eggs, and bring the whites to room temperature.

Preheat your oven to 350°F and line an 8″ square pan with parchment paper, letting the paper hang over the sides of the pan (you’re going to use these as handles later, see?).

In a large bowl, whisk together 2 1/2 cups icing sugar with 2 cups ground almonds (I used almond meal), 2/3 cup unsweetened cocoa powder, and a pinch of salt.

Add to that your egg whites and 2 teaspoons vanilla and mix well.

Pour that thick loveliness into the prepared pan.  And by thick I mean that this stuff will suck you into oblivion if you’re not careful.

Bake for 40-45 minutes, until the top is shiny and crusty and a cake tester inserted into the centre comes out mostly clean.

Use the parchment handles to carefully lift the brownie out of the pan (you don’t want it to suddenly sag and break in half, for instance) and set the brownies on a rack to cool completely.

What this recipe doesn’t tell you (because I guess the bookmark was too small) is that these things are next to impossible to cut cleanly.  I thought mine weren’t cooked enough and ended up putting them back in the oven for another fifteen minutes and they were still ridiculous, sticking to the knife and crumbling everywhere.  Warm, cold, didn’t matter.  Crumbles all over the place.

Wingin’ It Wednesday: A Custard of Sorts

I had a million yolks leftover.  Like, a million.  And I like pudding.  So I thought I’d make some.  Kind of.

I started with about 6 tablespoons butter in a pot.

Then I  melted that and added in 2/3 cup brown sugar and let that get all melty and foamy.

Then I reduced the heat and whisked in 1/2 cup heavy cream (again, something I had leftover from other stuff).  Added a pinch of salt, then 2 cups milk.

In a bowl, I took my 6 egg yolks (for argument’s sake, let’s  say there were 6) and whisked them together with 1/4 cup cream and 3 tablespoons corn starch (because I wasn’t sure how custardy these yolks would be after sitting in the fridge all week).

Ever so slowly I whisked that into the hot sugar/milk on the stove.

Almost immediately the whole thing began to curdle, but I kept stirring, and then I added 2 tablespoons vanilla.

Then miraculously things smoothed out quite a bit.

Fruity Oat Muffins (Gluten-Free!)

Fussellette sent me this gorgeous recipe from the CBC and I had to try it out after listening to her rave about the results.

The best part about this recipe is that it’s flexible — you can change the flavours around by changing up the fruit you’re using, even using fruit-flavoured yogurt if that’s what you have on hand.  I’d also like to play with the flours a bit, maybe swapping in some coconut or almond flour if appropriate.

Preheat your oven to 375°F and spray or line a muffin tin with paper cups. I recommend paper cups for these, because gluten-free baked goods tend to like to stick to what they’re baked in.

Take 1 cup oats (if you have a sensitivity, make sure they’re gluten-free), and pulse in a food processor until they’re all fine and powdery.  Plop that in a large bowl.

Add to that 1/3 cup brown rice flour, 1/3 cup tapioca flour, 1/3 cup corn starch, 1 tablespoon baking powder, 1 teaspoon baking soda, 3/4 teaspoon xanthan gum, 1/2 teaspoon cinnamon, and a pinch of salt.  Whisk that all together.

Then add in 1/2 cup each dried cherries, dried cranberries, and golden raisins.  I had this multi-pack with all those in it already, so I chucked that in, together with some chopped dried apricots.

In another bowl, rub 2 teaspoons orange zest and 2 teaspoons lemon zest (I used 4 teaspoons orange because I had no lemons) into 1/2 cup granulated sugar.

Whisk in 2 large eggs, then 1 1/4 cups Balkan-style plain yogurt1/3 cup light olive oil or vegetable oil, 2 teaspoons vanilla, and 1 teaspoon cider vinegar.

Add the flour mixture to the wet ingredients and stir only until just combined.  It will seem lumpy but don’t fret.  If you stir it too much you’ll end up with flat muffins, which, especially in gluten-free recipes, is the opposite of what we want to happen.

Spoon into your muffin tin (it should make 12 regular-sized muffins or 6-7 super large ones).

If you end up with some empty space in your muffin tin, add a bit of water into the empty cups — it will ensure that your muffins bake evenly.

Sprinkle some more whole oats and maybe some brown sugar on the top of each muffin.

Bake for about 25 minutes, until the tops are firm to the touch.  Allow to solidify in the pan for about five minutes after removal from the oven.  Use a fork to transfer the muffins to a rack to cool completely.  As with most gluten-free material, they won’t last long, so make sure to eat them or freeze them within a couple of days.

Have You Tried Banana “Ice Cream”?

No?  You probably should.  It’s like all the good things about ice cream, but it’s also gluten-free, vegan, and pretty darned good for you.  I feel like world peace could be achieved if everyone could have some of this ice cream (except for people who are allergic to bananas — they will just have to negotiate peace on their own terms).

So basically, you take some bananas.  Ripe ones, with a few brown spots.  You want them soft and squishy and very sweet.

Then you peel them and slice them into disks.  And then you freeze those.  In the freezer.  Or outside, if you live in Central or Eastern or Atlantic Canada.  Or Northern Europe.  Or Siberia.  Or Antarctica (actually, then they’d probably be too cold.  Your freezer is probably warmer than Antarctica).

Then you take them out of the freezer.  And you plop them in your food processor.

AND YOU GIVE IT A WHAZ.  Which is what Jamie Oliver would say.  And the Pie and I love him, so that’s one of our new favourite phrases.

And when it’s all gooey and soft and smooth, you can eat it!

If you prefer your soft serve a little more firm, you can chuck it back in the freezer for a bit.  I like the fact that when it thaws, because it’s banana, it doesn’t get all soupy.

And you can flavour it as well!  Add peanut butter, Nutella, chocolate chips, cocoa, vanilla … you name it (I added Nutella and vanilla).

Treats Week: Salted Toffee

January, and its evil-yet-slightly-shorter twin, February, are both miserable.  Have you looked outside recently?  Blech.  Don’t come to Canada in January or February.  If you do I don’t think you’ll stay long.

How do we survive this gray misery?  SUGAR.  And lots of it.  Personally, I need the calories to wade through waist-deep snow while my dolphin-corgi hybrid takes his evening constitutional.

So this week I will be featuring three easy treats that are each decadent in their own ways.  These will help you get through the worst of the winter.  And if you have the fortitude to resist them, then keep the recipes on hand for the next time the indulgences of the holidays roll around.

Today we’re going to make ourselves some glorious salted toffee.

Start by buttering a 10″ x 15″ rimmed baking sheet. Set that aside.

Preheat your oven to 350°F and plop 2 cups pecan halves (or pecan pieces) on a baking sheet. Not the buttered one. You’ll notice here I am using hazelnuts. I was out of pecans. But pretend they’re pecans. Stick those in the oven and toast them, stirring once or twice, for about 8-10 minutes.

Allow them to cool completely and then chop them roughly (saves you effort if you use pecan pieces instead).  Chop half of those up to fine little pieces, and set both the roughly chopped and finely chopped pecans aside.

In a large saucepan (because remember, sugar expands quite a bit when it boils), mix together 3 1/2 cups sugar, 1 1/2 cups butter, 1 teaspoon salt, and 3/4 cup water.

Heat on medium until the butter is all melted, then increase the heat to medium-high and, stirring occasionally, let that mixture come up to 310°F on a candy thermometer.

Should take about 20 minutes or so.

Remove from the heat and carefully stir in 1 tablespoon vanilla extract (be careful, this is where it gets fizzy) and the finely chopped half of your pecans.

Carefully pour your hot toffee into a rimmed baking sheet and let it cool until it’s fully set, about 30 minutes.

If you want your toffee pieces to come out even, you can score the toffee with a sharp knife after about 10 minutes of setting.  Make sure to wipe off your knife with warm water after each slice for easier cutting.

While that’s cooling, chop up 12 ounces of chocolate (the darker the better) and melt it over a double boiler or heat safe bowl suspended over a pot of simmering water.

Remove that from the heat and allow to cool a little bit (so it’s not molten) before pouring it over your set toffee. Smooth the chocolate down with a knife or offset spatula (honestly, it’s a handy item you won’t use often but when you use it, it will rock your cooking experience). Sprinkle the chocolate with your roughly chopped pecans and let it sit for about 20 minutes, until the chocolate has cooled but is still in a squishy state.

Then sprinkle THAT with about 2 teaspoons fleur de sel (or coarse sea salt, if that’s what you’ve got).

Chill the pan for about an hour, until it’s all set and lovely, then twist the pan to release the toffee and cut or break into pieces.  Store in an airtight container at room temperature for 2 weeks or in the fridge for about a month.

I’ve been experimenting quite a bit recently with caramel (not “carmel”, like Newfoundlanders and many Americans call it, that drives me bonkers) corn — something to which I am entirely addicted, but usually too lazy to make.  I think I’ve finally come up with a recipe I like, however, so now you can have it.  This version is plain jane, but feel free to jazz it up with chopped salted nuts for extra pizzazz.

First, start with 10 cups popped popcorn.  This is generally about 1 cup of the unpopped stuff.  We don’t have an air popper here, and I’m afraid of the chemicals in microwave packets, so I’ll let you in on how I make my own popcorn (when I’m not doing it this way).  Take about 1/3 cup of popcorn and plop it in the bottom of a brown paper lunch bag.

Fold the top edge down once and then again, over itself.

Put that on its side in your microwave and cook away.  Every microwave is different when it comes to popcorn, but I’ve found that on mine, cooking it for 2 minutes and 35 seconds on power level 9 (out of 10) pops nearly every kernel, every time, without burning anything.  Make sure to save people’s teeth by sifting out all the unpopped kernels before you use this stuff.

Now, preheat your oven to 250°F and spray a large roasting pan.  I used the one I save for turkey time.  You could also use a large metal bowl if that’s all you have. Plop your popcorn in the roasting pan for now.

Scrounge around and find yourself a wooden spoon (always preferable to metal in candy making), a spatula, a whisk, and a candy thermometer.  Keep those all handy.

Find a large pot, too, and plop in 1 cup butter, 2 cups brown sugar, 1/2 cup corn syrup (any colour, doesn’t matter), and 1/2 teaspoon salt.

On the side, have two small dishes ready with 1/2 teaspoon baking soda and 2 teaspoons vanilla.

Bring the contents of the pot to a boil, stirring often, and clip the candy thermometer to the side. The reason you use the wooden spoon here is because sugar crystallizes more quickly on metal than wood, and crystallization is not what you want at this particular juncture.

Once the mixture starts boiling, stir it constantly for 1 minute.

Then take the spoon out and let it boil on its own for 5 minutes.  It’s going to boil up pretty high, so make sure you use a large pot for this. At this point, your candy thermometer should be reading 250°F, which is the magic number for the hard ball stage — exactly what we want.

Turn off the heat and stir your mixture for about a minute.  Then remove it entirely from the heat.

Whisk in your vanilla and baking soda.  It will fizz up, so be careful.  See how the texture and colour has changed?  Well, you can’t in that photo because it’s a terrible photo, but it will become smooth and a light opaque brown almost immediately. Keep whisking until it more or less stops fizzing.

Slowly and in a controlled stream, pour your caramel over your waiting popcorn, mixing with a spatula.  Don’t worry if you don’t get it entirely incorporated.

I suggest leaving all your caramel tools soaking in hot water for a few minutes.  It makes cleanup so much easier.

Pop the roasting pan filled with popcorn in the oven and bake it for an hour, stirring it all over every 15 minutes.  While the caramel had started to harden on you before you stuck it in there, baking it at this low heat enables it to ooze all over the place and cover everything evenly.

So when you’re stirring, make sure to scrape the bottom of the pan, because you will always find a nice puddle of caramel down there.

Spread a counter with waxed paper and spray it, too.  Once the hour is up, take the pan from the oven and spread the popcorn in a thin layer on the waxed paper to cool. Squish it down with your spatula to spread it out. Doing that now will make it both cool faster and be easier to separate after it’s cooled.

Once it has fully cooled, break it up into pieces and store it in a sealed container for up to a few days.

Or package it in wee bags for a bake sale, which is what I did.
